My server stands on Pleroma and has 5000 max length of toot. But app still shows 500 as max.

Pleroma, or at least the instance you are using, has a custom format of informing the max characters supported. This custom format was created before Mastodon API officially supports a standard format. Please discuss this with the instance's maintainer. Thanks!
