What do I do if me and the snipers I added can only break one block at a time?

Read about brushes in the wiki (http://www.voxelwiki.com/minecraft/Voxelsniper).
If you already did that, then provide more information on what you did and what other plugins are running on your server.

Does 1 block mean with the arrow or by hand?

If by hand, tell me what plugins are running, else follow mikes link. Your probably using the single snipe brush (Default brush)

Okay, that means your snipers.txt file is fie. You need to switch your brush. Ex: /b b Would make a ball of your current voxel.

Please read the wiki on how to use brushes =D
