I'm not sure what you mean by that, but if you mean how to change the Minecraft and Fabric version, visit https://fabricmc.net/develop/ .

Choose your desired version from there and then change them in the gradle.properties file. Note that the client might not build after that, you then have to modify/fix the code by yourself.
