Can I install a second instance? If so, could you explain how to do this?

You can follow this https://vineelsai.com/post/make-your-own-wsl-distro, for root fs you can either extract it on your own from docker or you can download it from https://github.com/VSWSL/Arch-WSL-RootFS/releases/tag/v1.0.8
