event_pet_summoned and event_pet_dismissed would be triggered when a pet job calls and dismisses pets. This would be very useful for example for SMN, where key mappings could be redefined depending on which avatar is out.

I'd like to add this clarification: if this is implemented, I'd like pet_dismissed also to be triggered when the pet disappears because it or its master got killed.

pet stats in general - HP, TP, etc

This would be possible using the Pet Info packet, with the exception of Charmed BST pets. Check out how GearSwap makes the pet_change event for more information.
