Mermaid plugin? Markdown flavor / agnosticism?

I'm new to the underlying design philosophy of nb, so please forgive me if I'm asking something irrelevant. I'm guessing that, since we're using Markdown here, the 'flavor' of markdown may or may not be important, depending on the assumptions of the toolchain/pipeline. So this is either moot or important :)

Say I want to include mermaid diagrams or TeX equations. Different Markdown interpreters deal with these things differently, of course.

I'm thinking that nb is interpreter agnostic when it comes to MD, but maybe not?
