For example

FILE_SYSTEM.sink(filePath.toPath()).buffer().use { Json.encodeToBufferedSink(OREO, it) }
val store: KStore<Cat> = storeOf(filePath = filePath, default = MYLO)
store.get() // Returns MYLO but should be OREO
