Simplify using String#tr #1

If you are willing to change ALPHABET to a String, Ruby's tr method could simplify the translate method a lot:

ALPHABET = ('a'..'z').to_a.join
#...
private def translate(from, to, text)
  text.downcase!
  text.tr(from, to)
end
