Replace YAML setLogger calls + monolog.logger tags with #[WithMonologChannel]
(monolog 3.5, MonologBundle 3.10); setLogger comes from LoggerAwareInterface
autoconfiguration. UsageStatisticsListener now implements LoggerAwareInterface,
which it was missing (it relied on the explicit YAML call).
