Opening this PR to create a release in a backwards compatible manner.

This is a new request after #165, but aiming at a minor version rather than major.

Background:

• There have been 200 commits since v1.0.0
• We want to sync content from this repo into https://github.com/thoth-station/helm-charts/ and we will use specific tags as a reference

The release version mentioned in the source-code couldn't be found in git tags, hence the release is created from the start.
If that is not the right behavior:

• Close this pull request & release issue.
• Fix the version string in source-code to reflect the latest git-tag, or create the missing tag pointing to the last release sha.
• Create a new release issue.
