v1.3.1 (https://github.com/DrummingBird1/gow-psp-recomp/releases/tag/v1.3.1) has Options > Language, with English, French or Spanish. Ghost of Sparta's US disc has all three languages, and with this setting the game loads its Spanish or French files. Chains of Olympus's US disc has only English, so that game stays in English. The European disc has more languages (see #6).

The launcher window itself is now available in Spanish too: Options > Advanced > Launcher language. Please tell me if any text stays in English.
