Perhaps using the phonegap build service?

Would be ace to have basic Android build available. It does look like all initial user testing can be on iPad, so any Android testing can be very controlled & absolutely does not need to be finished article.

Great! In which case, I think it'll be easier if I make it available
as a website instead for this prototype then..

Getting a proper ipad build that anyone can install is going to be too
tricky for our timescales because we'd need to get it into the app
store. Even a dev build requires me to have a mac, ipad and an apple
developer account, none of which I have at the mo.

Will it be ok to test/demo it as a webpage you just keep open? It'll
function exactly the same, you just won't install it..

I can get the site up on weds when I have my next afternoon to work on it.

Yes, looks like the only feasible option, and we can still get some meaningful testing done.
