feat: add webpack-analyzer-plugin to kui-shell/webpack

Enable the webpack-analyzer-plugin by setting WEBPACK_ANALYZER env var when starting up the webpack watcher (e.g. via `npm run watch`)

Also bumps some other webpack deps
