Old-Fashioned Rice Pudding A Hellenic take on a worldwide classic

Ingredients

  • 1 1/8 Cups White Rice
  • 3/4 Cups White Sugar
  • Salt
  • 2% Milk
  • Cinnamon

Equipment

  • Stove
  • 2 Small pots
  • Measuring Cup

Process Mix rice with only as much water as necessary, boil Mix 2% milk, sugar, and powder over low/medium heat Allow rice to boil for 15 minutes, stirring occasionally Add milk mixture (only as much as is needed) Simmer for 20 minutes (or until skin layer begins to form). If mixture gets too thick before rice is softened, add more milk mixture and continue stirring. Pour into small bowls and let sit for 5 minutes Sprinkle some cinnamon on top (optional) Serve immediately for refigerate when cool.
