Could we set <preference> from manifest.mobile.json?

Personally I don't think thats the right way to go, but we should find the right way to direct users towards customizations.

In addition- if there was some documentation on exactly which elements of config.xml can be set by manifest.mobile.json and the syntax for it- i understand that author can be set but i'm not clear on how to set author email and other parameters that seem related.
