Fix/scr info expose error msg

Description

Part of SCR fixes -

• Reduce verbose message / stack trace information emitted by graphql endpoints

Type of Change

• chore: Routine tasks, maintenance, or tooling changes

How to Test

This changes do not impact any existing features. It is just changing the error output when exceptions are caught in graphql resolvers.

• Test all flows
• 'hard code' error exceptions and test using graphql playround to see the reduced output
