What is meta-data and user-data? Could you provide some examples in the documentation?

meta-data and user-data are files required for the new Ubuntu network installation (starting from Ubuntu 20.04). More details here. These files are specified as kernel parameters at network boot and they contain network installation configuration. They have a similar role to kickstart or preseed files. We did not document kickstart or preseed in Ralph in any other way than "Preboot configuration allows you define custom files being executed during Deployment". I can try to modify this sentence to clarify a little more what purpose the files related to a Ralph deployment serve, however I don't think Ralph's documentation is the right place to document the files themselves.
