Added light theme colours to theme definitions
Updated dark theme colours to match palette creator output
Added meta tag to prevent auto dark mode from being applied and bespoke dark mode used instead.

To enable users to view the site in whatever theme they prefer. Dark mode has benefits at night + with battery life etc. but light theme can be better to read during the day for some individuals.
