That which we call a "BGS", By any other name would smell as sweet

We're going to start using the term "Relay" instead of BGS. The role and functionality of the service isn't changing, just the name. As in:

• "a new atproto relay implementation in Erlang"
• "consume the European relay's firehose"
• "how many relays subscribe to your PDS these days?"

BGS as an acronym ("big graph server") has always been a placeholder name, and creates extra confusion and friction for folks learning about the atproto federation architecture. We have batted around alternative names for months and are so happy to have settled on Relay!

This will probably take a while to roll out in documentation, code, etc.
