cell set definitions and analyte mappings

KJ100 files are now located in vdb

consider the possibility of analyte remapping, re: naming -- maybe be preferable to call this COPRO vs KJ100

*** need to maintain versioning --> will be added to the config

options for assay_type include "COPRO" rather than "KJ100"
