Add @vielmetti as co-owner of this repo

I'd like to set up the repo with some tags and tooling so we can categorize incoming requests and streamline the approval process and close out some old unfulfilled requests effectively.

I'm open to either a /-command based effort for adding tags, or just adding me in (as a representative of @equinix ) as co-owner.
