Minimal/Server Option?

is it possible to install your own desktop environment...

I have tried to install mate but of course I can't...

is there a possibility you could rip up a distro and make a minimal out of it?

Yes, it is possible.
You can build your own target files and then install them with crouton's '-T' option, see below:

    -T TARGETFILE  Path to a custom target definition file that gets applied to
                the chroot as if it were a target in the $APPLICATION bundle.

There have been requests for 'mate' and a PR has been started but it hasn't yet made it through the review & fix gauntlet.

You could try it if you want.
