Closes #6085

I suppose it was inevitable that an issue with Windows was an issue with paths!

This PR escapes the backslashes in the paths before they're written to the templates.

We should start running Windows CI even though it's horribly slow

Perhaps we only turn it on for a single node version?

Yes, running the nextjs integration tests on a single node version would cover a lot!
