This is a first pass at adding more information to these docs, specifying types, and clarifying some statements.
This was a bit too noisy in the title of the section. I've also consolidated some of the paragraphs in the description.
Let's stay consistent with the other sections in the docs which don't do this.
Also regenerate the Sphinx docs.

This PR updates the docs page for the
[[column_mappings]]list. It adds more information, clarifies some key points, and specifies input and output column types for the column mappings. It also combines some sections and shortens example TOML snippets where they were really long.The changes to files in the docs/ directory are automatically generated by Sphinx.
