Move `Options.coverage` to `ProjectWorkspace.collectCoverage` #5929

Summary

For IDE plugins like vscode-jest it is much easier to modify the coverage flag as part of the ProjectWorkspace than via the Options, since it is more likely a setting controlled by the user like pathToConfig but not a fixed run parameter like noColor or shell.
Since the code hasn't reached npm yet, I would therefore propose moving the coverage flag to the ProjectWorkspace (and while doing so rename it to be more expressive).

Oh sorry, I thought that running yarn lint would also lint the Markdown files.
Does this PR make sense or is this just an issue with the implementation in vscode-jest?
