Adding highcontrast resources

This PR introduces the following changes:

• Updated the remaining controls (from # ) and updates styles where needed to make controls look more like WinUI.
• Adding resources for HighContrast.xaml
• Adding (basic) logic to detect high contrast theme changing

Currently, the colors of the "Desert" highcontrast theme are used.

Steps to test:

• In Windows 11 Settings, go the "Contrast Themes"
• Select "Desert" and click "Apply"
• Run WpfUi Gallery, check controls
