chore(v1.x): remove docs actions no longer relevant

• Remove the freshness check action as it's no longer necessary for the v1 docs.
• Remove the action generating OAS for v2 API routes since all changes are being made on the develop branches now.
• Remove the action generating UI reference since the UI docs are hosted from the develop branch.
