Edits after the new analysis repo

Now we have a new repo for the streamlit apps, some things can be got rid of here.

• keep process_viz_data.py and make edits which were originally in a now-closed PR: i,e most similar skills plots for occ #169 occupations plot edits #168 regional plot edits #174
• delete other streamlit app bits
