Hi,
you have 2 solutions:
1) simple/long: edit the ethogram and then use Find/Replace function on
each observation (see the attached screenshot)
2) difficult/quick: directly edit the BORIS project file (JSON format).
Work on a copy of your project file and be careful (use a good text editor
_ NOT Word _ or work online: https://jsoneditoronline.org/)
