Is there any way to change the default port binding for the VNC session from 5900 to another port in case 5900 is already in use?

Yep — if you're using configure(remotes=1) our code will search for an open port. If you're spinning up the Docker container by hand, you can pass -p <desired>:5900 to expose port 5900 inside the container to <desired>.
