Apps that don't show their icon include Slack and Mattermost

I'm also seeing this with OBS and Telegram. I thought it might be Flatpak-related, but the .deb version of OBS also doesn't display a status icon.

I do see Steam's icon in the status area though.

This is at least one of the issue behind
#165. OBS now shows it's
icon instead of an empty space. But the Mattermost flatpak doesn't show
anything. (Is that Flatpak related, or does it not use
`StatusNotifierItem`?)

Requires pop-os/libcosmic#368. Ideally, it
should have some way to choose from multiple icons in memory of
different sizes.

Adding to this, VLC also doesn't display its icon (but otherwise works).
But qBittorrent displays its icon, but its entry in the status area doesn't respond to anything (left or right clicking does nothing).
Both are tested on Flatpak, not sure about native versions.
