🐛 Schema version number should auto increment

Summary

Given the following UI/scenario...

The work was created on version 5. If I edit and save the work, that work's schema version should get updated to the latest. In this case, version 7.

However, this is not happening. When I go back to edit the work, the created on version should be 7 and reflect the metadata options for that version.

And when I find the work via the console, the schema version is still 5; it should be 7.

Acceptance Criteria

• The work should use an updated schema version, if available, when edited.
