Also

  • removed empty data dir
  • mounted all of shed at /var/shed instead of /var/shed/config
  • added COMPOSE_PROJECT_NAME to .env so the containers are named the same, no matter the filesystem location

I'm not sure where COMPOSE_PROJECT_NAME is actually used – maybe it should have been in a different PR where it was? Anyway, this PR works fine so I'm merging it in, and it makes sense to me to expose a bit more of Shed's stuff outside of the container to me too.
