In terms of release I would suggest the following:

  • follow GitHub flow and use the master branch as a release branch
  • every Docker Image should be tagged with the corresponding tag from the master branch (thus, it will be easy to check a code for a specific Docker Image)

In addition, if the "latest" tag is used, make sure that it's really points to the latest tag (at the moment it's not).
