docs: checkpoint documentation #1562

This is an attempt at slightly rewritting the documentation of the checkpoint keyword to make its use easier to understand.
Adding one very simple example of creating an arbitrary number of files before deirect aggregation, on which the second existing example is then built.
Requirement to use directory vs. filenames as output in this case is made clearer.

Feedback welcome!


  • The PR contains a test case for the changes or the changes are already covered by an existing test case.
  • The documentation (docs/) is updated to reflect the changes or this is not necessary (e.g. if the change does neither modify the language nor the behavior or functionalities of Snakemake).
