Chore - Add Automatic Sprints to the sBTC Project Board

1. Description

Add automatic sprints to the sBTC project board.

1.1 Context & Purpose

The sBTC Project board gets confusing and its hard to see what's going on at any given week. This ticket is to add automatic sprints.

2. Technical Details:

This should be done with a mix of GitHub actions and just project board management.

2.1 Acceptance Criteria:

  • There's a PR for automatic sprints
  • The PR is tested and approved
  • The PR is merged.
