Fix electron-builder output colliding with packaged files

directories.output was set to "dist", the same folder vite.config.ts
emits the renderer into and that the "files" glob packs into app.asar.
electron-builder was recursively copying its own partially-built
win-unpacked output back into the asar it was producing, inflating it
to 700+MB and intermittently racing the electron.exe -> product-name
rename (ENOENT) during publish. Point output at a separate "release"
directory instead.
