fix: package discovery

Description

Fixes package/module discovery in setup.py by allowing setuptools to dynamically discover packages instead of requiring us to list them all - ignores tests and examples in the final product.

Also prepares v7.1.1 for release.

Closes #189

Testing

• Inspected the built assets to ensure that the beta module is now included.
• Pulled in the library locally to a separate project and ensured that the Referral classes can be called and no errors are thrown.
