Refactor `build.js`

Currently the build.js page is so powerful, as we keep adding more and more stuff (sidebar, search, ai menu, etc) this might become unmaintainable

We need to look into how to make it more organized and modular

This issue is also part researching on what the best practice is for build script and how it's done, especially for vanilla js project like this docs
