[Go] Check error of xml Encode in the API client #3027

PR checklist

Description of the PR

This checks the unhandled error returned from the xml Encoder. This will return an error if the user provides a Content-Type matching xml with an incorrect body

The method header is here
func (enc *Encoder) Encode(v interface{}) error

I missed running ./bin/go-petstore-withxml.sh and it seems to have many changes that were missed by previous PRs. Should I add these here?

./bin/go-petstore.sh was run though

I fixed the commit email problem by adding my commiters email to my account
