Update 'Testing library' section in manual

OpenSCAP in master doesn't build probes as separate binaries anymore.
OVAL_PROBE_DIR which specified where to source the binaries from is removed in #1050.

Remove mention of OVAL_PROBE_DIR in manual and update how to test the library.
