Update citation and badges

Description:

• Add a badge for our demo - courtesy of @JosephMarinier
• Change the color of the slack account to blue - so it's the same 'informational' status
• Add the paper as our preferred citation
• Edit our citation file to add a few fields and fix the DOI.
