cli: Replace `clap` with `usage-rs` for CLI parsing 36276da

• Swap the Parser and Subcommand derives for usage-rs Cli and Subcommands
• Bump studiole-logging to v0.5.0 with the usage feature so --log-level rejects invalid values and lists the accepted values in help
• Add unknown_flags = "error" to retain clap's rejection of unrecognized flags
• Gain -V/--version
• Keep the fallback to mount when no subcommand is given
• Derive about from a new Cargo.toml description, worded per the nixpkgs meta.description rules
• Rename CliOptions to CliArgs and SubCommand to Subcommand to match example-rs
• Drop "simple" from the README.md overview
