docs: add unofficial dexie collection

this updates the docs to mention unofficial dexie collection option at https://github.com/HimanshuKumarDutt094/tanstack-dexie-db-collection.
Allowing users to create local first apps that primarily store data in indexDB using dexie.
the current collection has tests, and all are passing, the flow is simple and the crud calls are working cross tabs.
I will fix as much issues as they come until in future an official adapter is created.
