Fixes these issues found while removing todos and legacy code in 3.0:
fix(cache): call iriConverter only for resources
fix(jsonapi): use skolem iris
fix(symfony): catch identifiers exceptions in iri converter
fix(metadata): merge defaults arrays
Also adds a fix for the test case assertions (#4613 (comment))
