Adding a new mentorship directory to the community repo to keep track of all of AsyncAPI's mentorship program participation

Hey @AceTheCreator, to help get this approved, I committed changes to your feature branch. (I wanted to stop blocking you from getting this merged 😅 )

I've completed reviewing and updating our Google Season of Docs (GSoD) information. The major changes include refreshing the 2023 GSoD program and project information. Additionally, I've edited the verb tenses on the 2022 projects pages to accurately reflect the status of the GSoD 2022 program, which has already concluded.
