For the record, this is not an OSX issue but instead that we were not signing the artifacts with cosign 2.x which by default sends entries to rekor.

Chainloop v0.9.1 onwards will contain an entry in the transparent log

chainloop, docs, integration-demo repositories updated and the installation on OSX works now for 0.9.1
