Switched out the base docker image to use ubuntu not alpine. This was due to some incompatibilities with 7zip where alpine didn't have all the required pieces for it to handle unrar'ing.

Will watch a folder for rar files.
It will then use 7z to systematically go through and unrar every file. If it fails, it will leave the rars. If it succeeds it will delete them.
