fix: build universal binaries to fix damaged DMG on ARM Macs

Root cause: GitHub Actions uses Intel runners that create HFS+ DMGs.
ARM64 Macs expect APFS format for ARM64-only apps, causing 'damaged' errors.

Solution: Build universal binaries (Intel + ARM) which work on both
architectures and avoid the APFS/HFS+ filesystem mismatch.

Changes:
- macOS builds now create universal binaries instead of ARM64-only
- ZIP is primary distribution format (more reliable for unsigned apps)
- DMG still available but as secondary option
- Added explicit identity: null to prevent signing attempts
