Patch release simplifying and hardening observation-mode selection.

  • Infer high-level observation mode from --enzyme/--seq for bundled workflows.
  • Keep legacy --mode hidden but backward-compatible; an explicit value overrides inference and model metadata with a warning.
  • Stop silently treating models with missing mode metadata as PacBio.
  • Fix fiberhmm-posteriors incorrectly defaulting DddA/DddB workflows to PacBio mode.
  • Clarify DAF MD/reference behavior, dedup options, and current GpC/CpG/M.SssI support limits.
